I made this today, in anticipation of making my "Almost Wendy's chili" recipe after the holidays.
For all intents and purposes, you are definitely very close. That said, no home cook is likely to ever be able to recreate the commercially produced seasoning in any way, shape, or form. The liquid in the packets is a pale orange-ish, with no solids. Nobody in there right mind is going to go to the trouble of trying to obtain a clear liquid from this recipe.
As far as your ingredients go, I feel that you are spot on for the average consumer; although, I feel it to be a bit oil-heavy.
Emulsification was a concern for me, so I made the recipe as written, with an added pinch of citric acid to help in that regard.
Your recipe is an excellent choice for most users; of course, there will be the 20% that will make their own revisions, and make sure that you know that they did ๐.

Hi there! Great question โ if youโre using xanthan gum (I think thatโs what you meant by โpaint hem gumโ), you only need a tiny amount to thicken the sauce. Iโd start with about โ teaspoon, whisk it in well, and let the sauce simmer for a few minutes to see how it sets up. You can always add a pinch more if you want it thicker.

So, I made this last night. I had high hopes because I love that sauce and I do not eat fast food anymore. While this is a decent tasting sauce it tasted nothing like Wendy's Hot Chili sauce, it wasn't even close. I will use this sauce for other things because it does taste good it just isn't Wendy's Hot Chili sauce. Wendy's doesn't even have sugar in their recipe and this sauce is quite sweet. Do not make this sauce if you want an exact replica of Wendy's sauce because they aren't in anyway similar.
