Ingredients
Apple Filling
1largeapplepeeled and chopped
2tablespoonswater
2tablespoonsgranulated sugar
¼cupunsweetened applesauce
½teaspoonground cinnamon
Streusel Topping
½cupbrown sugar
6tablespoonsold-fashioned oats
6tablespoonsall-purpose flour
½teaspoonground cinnamon
¼cupunsalted buttercold and cubed
15Mini Phyllo Shells
15caramel bitsoptional
Instructions
Preheat oven to 350°F and place rack in center of the oven.
Mix apples, water, sugar, applesauce, and ½ teaspoon of cinnamon together in a saucepan. Bring to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes. Remove from heat.
Mix brown sugar, oats, flour, and 1 teaspoon cinnamon in a separate bowl. Use a pastry cutter or 2 forks to mash cold butter into the oats mixture until the mixture resembles coarse crumbs.
Place about 1 teaspoon of apple filling in each mini phyllo shell. Sprinkle about 1 teaspoon of the topping over the filling. Place a caramel bit on top, if desired.
Bake in the preheated oven until golden brown, 15 to 20 minutes. Let them cool before serving.

Cut Butter into Flour: This recipe calls for cold butter to be "cut" into your flour mixture. I like to do this with my hands so I can get a feel for the dough. However, you can also use a pastry cutter or a food processor.
